White pepper, like black pepper, is made from the berries of the pepper plan. White Pepper comes from berries that are picked at full ripeness while the Black Pepper comes from unripe berries. These berries are then soaked in water to ferment, leaving the outer layer peeled, exposing the inner seed. As this skin is removed, Piperine is also lost. This takes away some of the flavor and thus White Pepper tends to be the milder than Black Pepper. White Pepper is used in light-colored dishes to maintain visual appeal. It is also common in French, Chinese, Vietnamese, and Swedish cooking.
